Skinny Pumpkin Spice Cake

What screams fall? Um, any & everything “PUMPKIN” obviously!  So, I decided that I would polish off the last piece of my “Skinny Pumpkin Spice Cake” w/ Cinnamon Icing and a warm cup of coffee to welcome fall correctly this morning. I’m pretty sure it’s fair to say that we all get a wee bit excited about this time of year and the delicious food & drinks that come with it, such as pumpkin lattes, pumpkin pie, pumpkin bread, & “Skinny Pumpkin Spice Cake” ….you know what I mean? This “Skinny Pumpkin Spice Cake” has no butter, oil, or eggs which is why I refer to it as skinny!

Ingredients
  1. 1 pkg of Betty Crocker Super Moist Spice Cake
  2. 2 cups 100% Pure Pumpkin
  3. 1/2 tsp of Pure Vanilla Extract
  4. 1/2 tsp of Pumpkin Pie Spice
  5. Cinnamon Icing
  6. 1/2 cup Cream Cheese
  7. 1/2 cup Powder Sugar
  8. 1 tbsp of Coconut Milk
  9. 1 tbsp of Agave Nectar
  10. 1/2 tsp of Pure Vanilla Extract
  11. 1/2 tsp of Cinnamon
  12. Toffee Crumbles (optional)
Instructions
  1. Pre-heat your oven to 350. Mix your ingredients for your spice cake with a hand mixer or stand mixer. Grease a 13 x 9 dish and pour in your pumpkin mixture. Bake for 35-40 minutes. Cook yours according to back of spice cake package. It's done if you can stick a toothpick in and it comes out clean.
  2. To make the icing mix all the above ingredients minus the toffee with a hand mixer or a stand mixer.
  3. Allow your cake to cool completely then spread a thin layer over the top and slice. Crumble over some toffee bits for added texture & flavor.
Notes
  1. *It only makes a thin layer of icing. Double your portions if you like a lot of icing. I was trying to keep them on the skinny side.

  1. Looks yummy! Valentine’s Day is coming up hope your gonna post your yogurt stuffed strawberries with granola on top. They are a hit around here my husband and son love them they are soo delicious!
