So, clearly with all the “Avocado” recipes I’m making its apparent I have a shit ton of “Avocados” (which means a lot)! These “Skinny Avocado Brownies w/ Avocado Mint Icing” are INSANELY DELICIOUS! I admit I’ve never had “Skinny Avocado Brownies w/ Avocado Mint Icing” but while searching out new recipes to try with avocados I decided that I should give these babies a go and that I did with my own twist. No, you can’t taste avocado and yes, they are effin’ delicious! The avocado is a great substitute for the oil and eggs and creams that typically fill your brownies and icing.

Brownies made w/ Avocado & Coconut Oil

  2. 20 oz Ghirardelli Dark Chocolate Brownie Mix
  3. 2/3 Cup of Ripe Avocado
  4. 1/2 tbsp of Coconut Oil
  5. 1/3 Cup of Water
  6. Avocado Mint Icing
  7. 1 Ripe Avocados
  8. 2 Cups of Powdered Sugar
  9. 1 tbsp of Organic Pressed Coconut Oil
  10. 1/4 tsp of Mint Extract (more or less depending on you)
  1. Brownie Mix
  2. Pre-heat to 325 degrees. Hand mix your brownie mix, avocado, coconut oil, and water in a bowl until everything is incorporated. Lightly grease dish, pour in mix and cook according to the back of box. Don't over cook you want them moist.
  3. Avocado Mint Icing
  4. In kitchen aid mixer or with hand mixer add your ingredients and mix well until smooth like icing.
  5. Once brownies are done allow to cool and then top with your avocado mint icing! πŸ™‚
