Fresh Sourdough Caprese Sandwich

I live for good food, fabulous food, and when I get a craving for a sandwich which is rare then I go big or go home. Thats why the caprese sandwich was calling my name.  It’s a jazzed up sandwich with parmesan crusted sourdough, prosciutto, roasted red peppers, tomatoes, mozzarella, and basil chimichurri! The flavor combinations are bold and insanely delicious. I hope you enjoy!

Caprese Sandwich
Caprese Sandwich w/ Parmesan Crusted Sourdough, Prosciutto, Roasted Red Peppers, Tomatoes, Mozzarella & Basil Chimichurri

  1. Sourdough Sliced Bread
  2. Red Bell Pepper (remove seeds and cut into thick strips)
  3. Parmesan (fresh shaved)
  4. Prosciutto (thin slices)
  5. Tomatoes (diced)
  6. Buffalo Mozzarella (fresh in water if available)
  7. How to Make Basil Chimichurri
  8. 1 Cup Organic Basil (finely chopped)
  9. 1/4 Cup Cilantro (finely chopped)
  10. 1/4 Cup of Olive Oil
  11. 2 tbsp White Vinegar
  1. Pre-heat your oven to broil.
  2. Shave your parmesan and cover the top of your sourdough slices. Then toast under the broiler on the middle or bottom rack. Careful not to burn but cook so the cheese is melted and browned.
  3. Roast your red bell pepper strips under the broiler until charred. You can brush lightly with olive oil.
  4. Make your chimichurri by mixing your basil, cilantro, olive oil, and white vinegar.
  5. Slice your tomatoes and your mozzarella.
  6. Layer your mozzarella on the flip side of the parmesan crusted sourdough and pop back under the broiler until slightly melted.
  7. Now, add some thin sliced prosciutto, tomatoes, and roasted red peppers.
  8. Brush over some basil chimichurri and press the other slice of parmesan crusted sourdough over the top. Cut in half and WA-LA "Caprese Sandwich."
