 If you don’t think Blueberry Mascarpone Stuffed French Toast is a good idea for breakfast then we are definitely of a different mind set. I’m kind of obsessed with french toast and stuffed french toast is just on a whole other level. And it just happened to be my Valentines Day breakfast because all you need is a little love with a side of Blueberry Stuffed French Toast and thick but bacon. And the only way to enjoy is to eat it in bed. How else do you describe happy? 

Sweet & salty happens to be my ultimate flavor combination. I used the thick cut CA brand french toast with mascarpone cheese and fresh blueberries then dusted lightly with powder sugar and drizzle with a maple syrup! You get texture and flavor in every bite. The crisp bite of toast with the ooey, gooey, mascarpone-cheesy stuffing, whole blueberries .. are you drooling yet? I mean this is how you look like a super star in your kitchen and jazz up breakfast!

Ingredients
  1. French Toast Thick Bread Slices
  2. Powder Sugar
  3. Maple Syrup
  4. 1 tbsp of Butter
  5. BLUEBERRY MASCARPONE CHEESE STUFFING
  6. 1pkg of Blueberries
  7. 1 Cup of Mascarpone Cheese
  8. 1-2 tsp of Brown Sugar
  9. 1-2 tsp of Cinnamon
  10. Splash of Honey
  11. EGG WASH
  12. 2 Eggs
  13. Dash of Cinnamon
  14. Splash of Pure Vanilla
  15. Splash of Milk
Instructions
  1. Make your blueberry mascarpone mixture by mixing all the ingredients in a bowl.
  2. Make our egg wash mixture by mixing your ingredients in a big enough bowl for dipping.
  3. Take two slices of thick cut french toast bread and spread your blueberry mascarpone mixture down the center making a french toast sandwich.
  4. Now dip on both sides into your egg mixture.
  5. Add your butter to your pre-heated pan to melt over medium-low heat.
  6. Place in your stuffed french toast and cook until browned on both sides.
  7. Place on your plate and dust with powder sugar and drizzle with some maple syrup.
